Shepherd's Pie - Plant Style

I got super hungry this afternoon so I had a quick snack of flax flakes and soymilk.
Dinner tonight was a vegan shepherd's pie. Instead of the traditional ground meat layer, I used a can of kidney beans dusted in whole wheat flour, a splash of soymilk, garlic powder, cumin, paprika, salt and a touch of cinnamon. I bulked up the corn layer with half a package of thawed frozen spinach and seasoned that layer with paprika, garlic powder and salt. I topped it all off with mashed sweet potatoes (a large sweet potato cooked in the microwave and mashed with some soymilk). Dust the top with paprika and cinnamon and bake at 350 degrees for 20-30 minutes.
Sorry so short but Grey's is on and it looks as juicy and drama-filled as ever. Are you a Grey's fan? After the episode's over - what are your thoughts on the episode? I've seen a few spoilers so I'm interested to see how it pans out!

My goodness that looks great! I wanted to let you know that I think I will "officially" go vegan (as much as possible) on October 1. You have done a great job with it, I'm very inspired :)
I was really happy with Grey's last night. Last season I was starting to lose interest a bit, but now they've got me hooked again. And I love all the couples! So much love :)

You are so talented in the kitchen! You can take the most unfriendly vegan recipe and completely renovate it. You could make a cookbook like that girl!
Grey's...never watched it. I know, I'm like the only person in the WORLD that doesn't watch. Hope you enjoyed it, though!
