Vegan Appetizers

What a whirlwind of a day! We never made it to the park or anything today, but that's ok, we got a lot of errands done. :)

We stopped for lunch at Roly Poly, a wrapped sandwich spot I had seen nearby us in Gainesville and also on Ryan's blog.


I have to say that while I wasn't so impressed with the employees cursing and flicking each other off in front of customers (and I'm pretty sure the guy rolling the wraps may have been rolling something else before his shift...), I was very impressed with my vegan options.

I went with a "roll your own": small (6") wrap on whole wheat tortilla with red pepper hummus, avocado, mushrooms, roasted red peppers, carrots, cucumbers, alfalfa sprouts, baby spinach, plum tomatos, kalamata olives and cashews.




The tortilla was a little stale, but other than that I really enjoyed it. I can't wait to go back again and come up with a more creative wrap (maybe involving the apple butter or mango chutney in some way? yum!).

Before dinner I went to the gym (while Ross ran 5 miles in the rain in 40 minutes!). I have been so tired today and really didn't want to go, but I figured if I just went I'd get motivated once I was there. Usually that's enough to get me going and actually start enjoying the workout but not today. I did 20 minutes on the treadmill (speed 4.0, incline from 4.0-8.0) followed by 2 sets of 10 reps on every machine in the gym. :) Vague, I know, but I'm exhausted right now and don't feel like looking up every machine. I do know I worked practically every muscle in my arms, as well as my back and shoulders.

I was looking forward to dinner all day. A romantic dinner for two! I adore appetizers for dinner. Tonight was no exception! I made some apple-pear sauce, spinach-sausage bread, stuffed mushrooms and roasted asparagus.


I had about 3 mushrooms, 1.5 slices of bread and probably 1/4 of the asparagus. The stuffed mushrooms - Oh. My. Gosh. Soooooo freaking good. Same with the spinach sausage bread. I'll post recipes soon, but know that everything was 100% vegan (and tasted just like the non-vegan versions I've made before) and was fabulous.

We rented Wolverine from the Blockbuster Express (Blockbuster's version of Redbox) tonight and Ross just started it. No clue why I'm so exhausted tonight, but I predict I'll pass out on him within 30 minutes. ;)

Ohh I'm looking forward to seeing how you veganized sausage bread! It was one of my favorite things. I love stuffed mushrooms too :)

Is that the Roly Poly on 34th and 16th? Near D'lites? If so I used to eat there all the time when I was at UF. First ROly Poly, then some soft serve of course!

I love Roly Poly. When we lived in Augusta, GA, we ate there quite often. Unfortunately there aren't any here in Northern Virginia, which is a big bummer.

That place seems like it would be a great place to go, aside from the punk kids.

The apps look great. You seem like a very talented cook
